If you are hand-holding the lens for portraits, you will soon hate the
size and weight and awkwardness of the 80-200mm f2.8. If you are using a tripod, you will not like the 80-200mm f2.8 Nikkor, unless you buy the just-announced version, or the newest Kirk (or similar) bracket, and the
rig will still be awkward. Also, performance of the zoom under 7' or so
at the long end at wide apertures is not wonderful. I think you would find
the primes more pleasant to use. Zooms are great (especially tele zooms)
when you are in a hurry, and your movement is limited. Otherwise, primes generally have better performance, are smaller, lighter, and often cheaper
and faster. BTW, I have MANY lenses, but few zooms anymore (the 80-200mm
f2.8 is the most used of those, but I use it only when the speed is sufficient, and I don't have time to change lenses). And, BTW, all the
lenses you mentioned are first-rate.
