With most, select manual-set mode (the odd symbol for it
appears in the finder), push the selector wheel in while
aiming at a suitable subject for white-balance (white
card, off-white card [in the opposite color direction from
the bias you want], white/grey wall, etc.), wait for it to
stop blinking, then release it to lock the balance. I've
generally been happier with the results when using AWB or
the white-balance presets, though...
