It's rather a matter of technique.

When I was learning photography my tutor took excellent candids using a
5x7 Linhof Technika with a 240 mm lens. He'd go out into the park, put
the camera on a tripod, flick the half dead cigarette butt from his
mouth down the path, and focus on the cigarette. Then he'd insert a
film, cock the shutter, and put a pneumatic release on the ground, and
sit and eat his sandwiches. As people passed the cigarette he'd trigger
the release with his foot, wait till they'd gone and change the
darkslide.

He'd get 3 or 4 excellent candids every day this way...
