The very worst sound I've gotten at receptions is when
using the on-camera mic (omni or short-shotgun) with
a PA... The wireless is a pain, but if it can be placed
on a podium where everyone will speak, it works well.
As for levels, use the excellent Sony AGC - you will drive
yourself nuts "gain-riding" the loud and soft "speakers",
and will have clipping distortion from the unexpected
shout, laugh, cheer, emphasized point, etc. otherwise...
