Experience...;-) It depends on the camera (with a center-weighted/full-frame metering camera [FE/FM/F2/etc],
just avoiding too much unusual-light area in the frame works;
with a center-patch type [F3/8008/etc], including a representative
proportioning of subject values together within the patch works - all
in manual mode, of course... [I consider spot-metering inappropriate
for 35mm work - too slow, if done properly...]). Of course, the
camera meters are calibrated, so their readings are meaningful...
