My suggestion would be to use the 75mm for all sizes to 2 1/4 square
(be sure the condensers are set up for the 75mm lens), unless you are making large prints. The advantages of using a 75mm lens for 35mm are:
more even sharpness center-to-corner, more even illumination center-to- corner, more space under the lens for getting your hands in for dodging and burning, no need to change lenses and condenser settings when changing printing formats - hey, how can you lose?
