Most anytime of the year ('cept, maybe, mid summer....) should be good,
though you may be snowed out of the Grand Canyon North Rim in winter,
and Bryce-Cedar Breaks may be a bit cold then, too....(if open at all). Early and late day light is great to make the red-rock formations glow, or make the rows of figures in Bryce-Cedar Breaks stand out. I confuse the Arches parks, but the arches in the red-rock one (Arizona?) are so large that a 20mm or 16mm fisheye is useful - otherwise the lenses you have should be fine (though I would prefer to have a wider lens, also). is time to revisit these places......).
