could I get away with a 1CCD

Yes. I shoot B&W in an "old" TRV9 when
shooting infrared
(its color image is not very good...), and get nice
results (see: www.David-Ruether-Photography.com/ir.htm for samples).
Good 3-CCD cameras can offer superior tonality, though,
with more "open" shadows and better highlight
detail (see:
